Chocolate Chip Banana Bread

In the winter time when I have had enough of shakes for breakfast, my go too is some type of homemade banana or zucchini bread. I love sipping on a nice warm tea and having a slice or two first thing in the morning. I like to try out different recipes but this is one I go to frequently so I thought I would share. I have played around a bit with substitutions, however I do not usually make more than 1 - 2 substitutions at one time. I have listed these at the bottom if needed!

Here is what you will need;
1/2 butter; room temperature
1 1/4 cup sugar
2 eggs
1/2 cup sour cream
1 tsp vanilla
1 cup mashed ripe bananas
1 3/4 cups flour
1 tsp baking soda
1 tsp baking powder
pinch of salt
3/4 cup semisweet chocolate chips

Directions
Preheat oven to 325
Beat together first six ingredients
Stir in dry ingredients until moist, adding in the chocolate chips last
Divide batter between two buttered loaf pans.
Bake at 325 for about 40 - 50 minutes or until a toothpick comes out clean
*Substitutions
Butter - I would use Earth Balance
Sour Cream - I usually use kefir, plain yogurt, applesauce, or any dairy free yogurt just to add some moistness to it
Eggs - you can use an egg substitution of flaxseeds and water
Flour - just make sure if you are using a gluten free flour blend that its a good one you have used before. Not all bake the same, and I usually like to stick to the nameste all purpose flour blend
