Im just gunna cut to the chase.. Cause who wants to read a bunch of paragraphs about how I made these squares? Who cares right? Just go make them & ENJOYYY!
& try not to eat them all!
Here is what you will Need;
For the Rice Crispies;
1/2 cup butter
2/3 cup coconut sugar
1/3 cup almond milk / cream / coconut milk
1/4 cup unsweetened natural peanut butter
1 bag of dandies marshmallows (or regular ones if thats what your use to)
5 cups Krispe Rice Cereal (I used the Natures Path Crispie Rice cereal)
For the Chocolate Top;
1 cup chocolate chips - I use Enjoy chocolate chips, they do have a bit of brown sugar in them. For a sugar free option you could buy the Lily's chocolate chips that are made with stevia, or just use you regular chocolate chips!
2 Tbsp Peanut Butter - unsweetened Natural & Organic preferred! ;)
Directions
Line a 9 X 9 baking pan or container with parchment paper
Melt butter in a large sauce pan, once melted add in coconut sugar and stir until combined.
Add in milk / cream and bring to a boil, stir constantly and boil only for about 1 minute.
Turn the heat down, add peanut butter and marshmallow and stir, stir, stir!
It always takes me a while to stir this mixture, make sure to stir it until it is all melted and well combined (like the first picture shown above). A side note - mini marshmallows will melt faster ;)
Once its ready, with a spatula scrap into prepared pan and push down into the pan to flatten out the top.
Next in a smaller pan melt chocolate chips and 2 Tbsps of peanut butter together. This should not take too long, just make sure you keep stirring so that you don't burn the chocolate ;)
Once melted pour over rice krispies and spread to make an even layer of chocolate on the top.
Chill for about 45 - 60 mins then cut into squares.
I take mine out of the container to cut them, and also cut mine into small pieces!
