Oh how I LOVEE how medicinal our foods can be! Did you know that the peels of your lemons are just as important?! Its like that for most of your fruits and vegetables, we eat only part of them when we are meant to eat the whole thing!
Lemon juice has been used for all sorts of things, and most common now a days in your water, but what about adding the peel?
It has been said that the peels of the lemon holds 5 - 10 times more vitamins, minerals and enzymes than the juice itself. The peel contains lots of calcium, potassium, magnesium, folate, beta carotene, vitamin c and fibre!
The USDA National Nutrient Database for Standard References states that:
Every 100 grams of lemon peel has 134 milligrams of calcium.
The same amount has 160 milligrams of potassium.
The same amount contains 129 milligrams of vitamin C.
The same amount contains 10.6 grams of fiber.

Lemons are alkalizing, great for improving digestion, detoxing your kidneys and liver, preventing cancer and warding off bacterial and fungi infections. There are a few studies (linked below) that suggest when consuming the peel of your citrus fruits, it has shown to prevent the development of cancer cells. Lets look at how you can start taking advantage of the whole fruit!

1st things first; Buy & Wash ORGANIC lemons! If you are going to be ingesting the peel, I cannot express to you how important it is to buy organic lemons, and to wash them! If they are travelling from a distance to get to the store you are purchasing them at, there could be waxes or bacteria on their you will want to wash off.
2nd; I cut the ends off each end, and any part that may seem discoloured. Then cut the lemons into quarter size pieces.

3rd; Place the quartered lemons (peels and all) into a high speed blender and add water. I add 1/3 cup of water per 2 lemons. Side note, if you do not have a high speed blender you can try it in the food processor! Blend until smooth!

4th; Once the lemons are fully blended, pour them into ice trays to freeze for later. I just pop one out of the ice cube tray and into my water bottle for the day, but you could also add it to smoothies, cooking and so much more!

To store lemons to last for whatever you may need
them for next.. Store them in a glass jar and completely cover them with water! I have had mine last up to 2 months this way!
