Creamy Chicken Wild Rice Soup

This creammmyy soup is perfect for a light and cozy meal. I found this recipe online and altered it just a tiny bit to add a bit more flavour and to take advantage of the fresh herb in season..
I usually like to make these types of crockpot meals in the fall or winter when i'm frozen to the bone.. but honestly this was so light on the tastebuds that it was pretty delicious for the end of July! Not to mention all of the veggies and herbs are fresh in season to make it ;)
Here is what you will need;
1 cup uncooked wild rice blend ( I use the Lundberg brand, organic if I can find it!) 1 cup white onion chopped 1 cup celery chopped 3/4 cup carrots chopped 6 cloves of garlic 2 bay leaves (these were garden fresh!! & SO aromatic <3) 1 pound chicken breast (yup, just the whole thing uncut!) 6 cups vegetable broth 2 cups water (or more vegetable broth) 2 tsp sea salt 1 tsp onion granules 1 tsp oregano 1 tsp parsley 1/2 tsp marjoram 1/2 tsp ground pepper 1 good shake of cayenne - don't worry it doesn't come out to spice : ) . 5 Tbsp butter 1/2 cup flour (I used the Namaste gluten free flour blend) 2 cups milk (you can use any milk of your choice; almond, full fat cream, coconut.. This time I used half and half organic cream but I would usually use almond milk)
Now to prep it;
Place the first 14 ingredients into your crockpot and cook on low for 7-8 hours or on high for 3-4 hours
In the last 20 minutes of cooking melt the butter into a saucepan and mix in flour, once it is stirred in well add milk and whisk until thick.
Add this creamy saucepan mixture into the crockpot, mix well and pull apart the chicken breast with two large forks.
Put the lid back on and cook for another 20 mins and then enjoy!
